This is a family recipe that has been handed down through multiple generations. This recipe was originally given to my great, great grandmother in the early 1900’s by an English lady named Margaret. For the last hundred or so years my family has enjoyed this every Christmas morning with breakfast. The picture is of my Nanny (great grandma), myself, my sister and cousins. My Nanny passed her love of baking down to my grandma, who then passed it along to me. To this day one of my favorite hobbies is being in the kitchen baking with my grandma.
Ingredients:
2 cups sugar
1/2 cup butter
4 eggs, beaten
1/2 cup freshly squeezed lemon juice
Add all ingredients to a double boiler. Cook over medium heat, stirring often, until thick and clear. Use on waffles, pancakes, toast, rolls, biscuits…or just enjoy by the spoonful!
